The original button mushroom from which white buttons were developed. It is more nutritious and flavorful than white button mushrooms, and easier to grow.
This almost forgotten mushroom may help prevent storage of fat around internal organs.
The original brown button mushroom was the brown form of Agaricus Bisporus. They are currently marketed as Crimini mushrooms when they are small, and Portobellos (or Portabellas) when the caps are open.
Certain seasons of the year, growers may use Agaricus Brunnescens instead of A. Bisporus. A. Brunnescens has a firmer and whiter cap, and pinker (paler) gills when it is young. A. Bisporus is not quite as firm, and the gills turn darker much earlier.
