Blewits are supposed to be strong flavored mushrooms. I am not sure what that means, at least with this mushroom. We used it in this soup, and it tasted no different than the Crimini that we threw in because it needed to be used.
If you LOVE Blewits, put in more. If you don't care for them, swap out a Crimini for one or two of the Blewit caps.
No special ingredients, this is country cooking at its simplest.
- 3-4 Blewit Caps, cut in half, and sliced thinly (may substitute Crimini)
- 4 TBSP butter
- 1/2 lb lean ground beef
Place in 3 qt saucepot, and fry until the mushrooms are browned on the edges, and the burger is crumbled and cooked through.
- 2 large potatoes, peeled and diced
- 1 medium sized onion, diced
- 2 stalks celery, finely chopped
- 1 large carrot, shredded
- 1/2 cup shredded cabbage
- 1/2 TBSP chopped dried parsley
- 1/4 tsp salt, or more, to taste
- water to barely cover
Bring to boil, turn down, and simmer until potatoes are VERY tender.
In a 3 cup mixing bowl, mix:
- 3 TBSP finely ground hard white wheat flour (like Prairie Gold) OR 2 TBSP white flour
- 1/2 cup milk
Beat with wire whip until free of lumps.
- 1 1/2 cups milk
Stir until blended well.
Pour the milk and flour mixture into the boiling soup, stirring as you pour it in.
Keep stirring until the soup is thick and bubbly. Add more milk if you need to thin it down a little.
Remove from heat, and serve with fresh crusty bread, or toast.
Makes 3-4 servings.
